BEST Skinny Rotisserie Chicken Salad
This chicken salad is so good! It’s my “go-to” and it’s perfect to make and enjoy for a few days. My mom’s wonderful housekeeper, Dina, created this recipe. She makes it for my mom almost every week. My husband and I tasted it while visiting and we were hooked. I did make some skinny modifications like using light mayo and only using white meat chicken. Each ½ cup serving has only 112 calories and 6 grams of fat.

Shopping Tips
Most supermarkets sell cooked rotisserie chicken. My market sells 3 kinds. Lemon/Pepper chicken, regular and even an organic, vegetarian feed with no hormones. That’s what I used. They do vary in size. This recipe calls for 4 cups of diced chicken breasts. Since I only use the white meat, create another skinny meal with the leftover dark meat. Or, freeze the dark meat for a later use.

This recipe is very flexible. I included the amount of carrots, celery, and onions I like. You can add more or add less, to your liking.
Serving Tips
I like to serve this chicken salad as an open-faced sandwich. Spread 1 slice of Milton’s multi-grain bread or your favorite bread with yellow mustard. Spread 1/2 cup of chicken salad on top of the mustard. Top the sandwich with sliced tomato. So yum! To create a main course salad, prepared a mixed greens and veggies salad and toss with my skinny ranch. Top the salad with 1 scoop of chicken salad.

BEST Skinny Rotisserie Chicken Salad
Ingredients
- 4 cups diced or shredded cooked chicken breasts from a store-bought cooked rotisserie chicken.(skin removed), see shopping tips
- 3 large hard-boiled eggs, grated
- ½ cup carrots, diced small
- ⅓ cup celery, diced small
- ⅓ cup onions, sweet variety, minced
- ½ cup Best Foods/Hellman’s light mayonnaise
- A little salt and lemon pepper or black pepper, to taste
Instructions
- Remove skin from chicken and diced chicken breast. If desired use dark meat, too.
- In a large bowl, add the chicken and all of the remaining ingredients. Mix well to combine.
- This will safely keep in your refrigerator for 3-5 days. This recipe can easily be cut in half or doubled if needed.
