Chicken Alfredo Tortellini Soup Made Skinny


This main course soup is a real keeper! So divinely delicious, it combines light Alfredo sauce, baby spinach, chicken, and 3 cheese tortellini. My husband loved it so much he first had it for lunch but wanted it again for dinner. So quick to make it’s wonderful for a weeknight meal and fabulous enough for company. Each huge and satisfying main course serving has 324 calories 11 grams of fat and 7 Blue WW Freestyle SmartPoints and 9 Green.

Ingredients

2 tablespoons reduced-fat butter or Smart Balance Light

1 cup onions, chopped

2 teaspoons fresh garlic, minced

6 cups Swansons reduced-sodium chicken broth, I like Swanson’s

1 (15 ounce) jar Alfredo sauce, I use Classico or Ragu, See shopping tips

1 cup fat-free sour cream

2 cups cooked chicken, cut into bite-size pieces

1 (9 oz) package Buitoni refrigerated three-cheese tortellini, see shopping tips

1 (6 oz) bag fresh baby spinach

Ground black pepper, to taste

6 teaspoons Parmesan cheese, grated (optional for topping)


Instructions

1. Cook onions in microwave for 2 minutes to soften. In a large nonstick pot, melt butter. Stir in softened onions and garlic. Cook until onions are translucent, about 3 minutes. Stir often. Stir in chicken broth and Alfredo sauce. Cook over medium heat until heated through, about 3-5 minutes. Stir in sour cream and cooked chicken; simmer for 10 minutes. Mix cheese tortellini into chicken mixture, cover pot and simmer for 10 minutes. Mix in spinach, cover and continue to simmer for 2 additional minutes. Check cheese tortellini for doneness. You want it al dente (cooked just enough to retain a somewhat firm texture)

2. Ladle 2 cups soup into each bowl and sprinkle each with 1 teaspoon of Parmesan cheese, if desired.

Makes 6 main-course servings. Each serving, 2 cups.


Shopping Tips
Look for Classico Light Alfredo Sauce or Ragu for this recipe. It’s shelf-stable and found in the pasta sauce aisle. There are other brands available if you can’t these two.

I used Buitoni 3 Cheese Refrigerated Tortellini. It’s fresh pasta and is found in the refrigerated section of most supermarkets. There are other brands if you can’t find this one. And sometimes I use Trader Joe’s Cheese Tortellini.
