Skinny Poached Eggs Alla Pizzaiola

Poached eggs never tasted better, cooked in a deliciously rich tomato sauce and topped with Parmesan cheese. You’ll think you’re having the most decadent meal but it’s very healthy. Makes for a wonderful breakfast or dinner. Each very filling serving has 227 calories, 13 grams of fat and 2 Blue WW Freestyle SmartPoints, and 7 Green.

Prep Time: 10 minutes

Cook Time: 12 minutes


½ cup onions, diced

¼ cup red bell peppers, diced

1 tablespoon reduced-fat butter or Smart Balance light

1 teaspoon garlic, chopped

Salt and pepper, to taste

Small pinch of crushed red pepper

1 (8 ounces) can tomato sauce

½ teaspoon Italian seasoning

4 large eggs, I used Egg-Land Best eggs, see shopping tips

2 tablespoons Parmesan cheese, grated


1. Cook onions and red bell peppers in microwave for about 1 minute, to soften.

2. In a medium nonstick pan, heat butter over medium heat, add cooked onions/peppers, garlic, and sauté for 1 minute. Stir often. Mix in Italian seasoning, a little salt, black pepper, and a small pinch of red pepper flakes. 

3. Stir in tomato sauce and simmer for 5 minutes. Stir often. Gently drop in eggs. Be sure to keep the yolks intact. Cover and simmer on medium-low heat for about 6-8 minutes, until the egg whites are cooked through and the yolks are cooked to your liking.

4. To serve: Using a spatula, remove 2 eggs from each plate and add tomato sauce around it. Sprinkle each serving with 1 tablespoon Parmesan cheese.

Makes 2 servings. Each serving, 2 eggs, sauce, and cheese.


Shopping Tips
Whenever I use eggs, I like to use Egg-land’s Best eggs. They have less saturated fat, less cholesterol, more Vitamin D, more Vitamin E and double the Omega 3 than regular eggs. They are sold in most supermarkets. That said, choose any large eggs you like to use.
