
Just a handful of ingredients to pure deliciousness! These egg rolls have a simple ham and cheese filling, not at all what you think would go inside an egg roll but they really work! And, cooked up perfectly in the air fryer or baked in the oven. Each egg roll has 140 calories, 4 grams of fat, and 4 Blue WW Freestyle SmartPoints, and 4 Green. Serve 2 per person for the main course meal.
Ingredients
- 4 egg roll wrappers (found in refrigerated Asian section in the supermarket), see shopping tips and freezing tips
- Yellow mustard
- ½ cup (2 ounces) reduced-fat cheddar cheese, shredded
- 1 cup (4 ounces) lean ham, chopped, see shopping tips
- Olive or Canola oil cooking spray
- Yellow mustard or skinny ranch dressing for dipping (optional)
Instructions
- Preheat air fryer to 375 degrees. Place an egg roll wrapper flat on a dry surface. Spread the entire middle section with mustard. Leave the edges without mustard. In a row, a little below the center, place ¼ cup chopped ham and 2 tablespoons cheese. Moisten wrapper edges with water. Fold the sides in toward the middle, and roll up tightly around the filling. Seal with a dab of water. Repeat to make 3 more egg rolls.
- To Bake in Air-Fryer: Spray with cooking spray, and place in the air fryer in a single layer. Cook until golden brown, 6–8 minutes total. Turn over halfway at 3-4 minutes.
- To Bake in Oven: Preheat oven to 425 degrees. Line a baking sheet with parchment paper or spray with cooking spray. Place egg rolls on a baking sheet. Spray egg rolls with cooking spray. Bake for 12-15 minutes, until golden and crispy on the outside.
- This recipe can easily be doubled, tripled, and so on. Leftover egg roll wrappers freeze great. See tips below.
Notes
Makes 4 egg rolls. Each serving 1-2 egg rolls. These egg rolls are much larger than most. Two will completely fill you up, maybe even 1!
Shopping Tips
Trader Joe’s sells (8 oz) packages of Black Forest ham. It’s uncured and contains ‘no nitrates.’  In addition, most supermarkets sell this type of ham. Or, use your favorite lean ham such as Oscar Meyer or even turkey ham.
Freezing Tips
You can freeze egg roll wrappers, for up to 6 months. Egg roll wrappers should be frozen with waxed paper layered in-between the sheets to prevent them from sticking together. Thaw the wrapper either by leaving it outside the fridge for about 30 minutes or in the microwave for a few seconds. You can separate the wrappers individually even before you start wrapping. Just make sure that you cover it with a damp cloth/paper towel to keep it moist.

Loved this. I used my oven and placed them on a wire baking rack on a cookie sheet and sprayed them lightly with oil, I flipped them several times to keep them browning and used Convection 425 degrees. Used dijon mustard and 1/2 of a laughing cow lite cheddar wedge in each. Great and will do again and try other combo”s.
