Panera Fuji Apple Chicken Salad (Copy-Cat)

I love this main course salad at Panera. My skinny version has so many of the same ingredients as their salad but I’ve used a few skinny substitutes. It’s lower in fat and calories with fat-free feta cheese instead of Gorgonzola and it’s tossed in a store-bought reduced-fat dressing. In addition to the apple chips, I added freshly chopped apples. Each main course salad has 299 calories, 8 grams of fat. It comes together very quickly and tastes amazing!

Shopping Tips

You’ll find apple chips in most supermarkets in the produce section. Seneca Farms apple chips are gluten-free along with many other brands.
Girard’s Light Champagne Vinaigrette can be found in most supermarkets. It’s a gluten-free dressing! Trader Joe’s sells their own version. It’s equally good. Or use your favorite light vinaigrette.

  • 2 cups mixed field greens or spring mix
  • 1 cup romaine lettuce, chopped
  • cup cooked chicken, chopped (white meat)
  • cup apples, chopped
  • cup grape or cherry tomatoes, sliced or chopped tomato
  • 2 tablespoons red onions, diced
  • 2 tablespoons Girard’s Light Champagne Vinaigrette or your favorite, see shopping tips
  • 2   tablespoons fat-free feta cheese, crumbled
  • 2 tablespoons apple chips, broken in pieces, see shopping tips
  • 1 tablespoon pecans or walnuts, chopped (optional)


  • In a large bowl, add field greens, romaine, chicken, apples, tomatoes, and onions. Drizzle dressing over the top. Toss together well. Add the salad to a dinner size plate. Sprinkle with feta cheese all over the top of the salad and sprinkle with apple chips. Top with pecans or walnuts, if desired.
  • Although this recipe makes 1 salad, this recipe can easily be doubled, tripled, and so on.
