Quick, easy, and delicious for a family weeknight dinner. It will probably end up on your dinner rotation. It’s that good! Each serving has 266 calories, 9 grams of fat, and 4 Blue WW Freestyle Points and 6 Green.
Prep Time: 15 minutes (includes steaming veggies)
Cook Time: 20 minutes
4 cups broccoli florets
2 cups baby carrots, cut in half
4 slices bacon (I used Oscar Mayer Select Natural Uncured), see shopping tips
16 ounces chicken breasts (make 4 breasts)
Salt, pepper, and garlic powder, to taste
1 (15 ounces) jar light Alfredo sauce, see shopping tips
4 tablespoons grated Parmesan cheese, for topping, optional
1. In a microwave-safe large bowl, add broccoli florets and carrots. Cover with water. Cover bowl with plastic wrap and steam in microwave for about 5-6 minutes, until softened.
2. Add bacon to a large nonstick pan. Cook turning once until crisp. Remove bacon to drain on paper towels. Keep bacon drippings in pan. Add 4 chicken breasts. Season with a little salt, pepper and garlic powder. Cover and cook over medium heat, about 4 minutes, on each side until no longer pink. Remove cooked chicken to a plate. Do not clean pan. Add Alfredo sauce and steamed veggies. Mix well. Add cooked chicken breasts. Cover and heat 5-10 minutes until dish is hot.
Makes 4 servings. Each 1 (4 oz) chicken breast and 1 cup sauce including veggies.
There are many healthier bacon choices these days. They’re uncured with no nitrates. I like Oscar Mayer Select Natural. Most supermarkets carry it. Another I like is Applegate Farms Natural Sunday Bacon. Many supermarkets carry this brand. I bought it at Vons/Safeway and Whole Foods. I used Classico Light Alfredo Sauce for this recipe. It’s shelf-stable and found in the pasta sauce aisle. There are other brands available if you can’t find this one.
