This is the best chicken parmesan with a crispy coating, topped with marinara sauce, melted mozzarella cheese and Parmesan cheese! The secret to making super moist chicken, is dipping it in an egg before coating in bread crumbs. And, it’s made easy in an air fryer. Prep Time: 15 minutes
Cook Time: 10 minutes
2 (~ 8 oz each chicken breasts) sliced in half to make 4 thinner breasts
1½ slices multi-grain bread to create ⅔ cup bread crumbs, I used Milton’s multi-grain, see prep tips
4 teaspoons Parmesan cheese, grated
1 large egg
1 cup reduced fat mozzarella cheese, shredded
½ cup jarred marinara sauce or pizza sauce
Olive oil cooking spray
1. Preheat air fryer to 360 degrees.
2. Add bread crumbs. to a shallow bowl or dinner size plate. In another bowl and the egg and beat it. Dip chicken into egg then dip in bread crumbs. Be sure to coat both sides of breasts in the egg and crumbs. When the air fryer is ready, coat bottom of the basket with cooking spray. Place 2 pieces of chicken in basket and spray the top with cooking spray..
3. Cook 5 minutes, turn and top each with 2 tablespoons marinara sauce, ¼ cup shredded mozzarella cheese and 1 teaspoon Parmesan cheese. Cook 3 more minutes or until cheese is melted. Set aside and keep warm. Repeat with the remaining 2 pieces.
4. If your air fryer is larger you can cook all 4 breasts at once. Be sure to not overlap the breasts.
Makes 4 servings. Each serving, 1 breast.
To make bread crumbs: remove the crust, break up the bread, and add to a blender or food processor. Process until the bread turns into crumbs.
