  • 2 (~ 8 oz each) chicken breasts sliced in half to make 4 thinner breasts
  • slices multi-grain bread to create ⅔ cup bread crumbs, I used Milton’s multi-grain, see prep tips
  • 4 teaspoons Parmesan cheese, grated
  • 1 large egg
  • 1 cup reduced fat mozzarella cheese, shredded
  • ½ cup jarred marinara sauce or pizza sauce
  • Olive oil cooking spray


  • Preheat air fryer to 360 degrees.
  • Add bread crumbs. to a shallow bowl or dinner-size plate. In another bowl and the egg and beat it. Dip chicken into egg then dip in bread crumbs. Be sure to coat both sides of the breasts in the egg and crumbs. When the air fryer is ready, coat bottom of the basket with cooking spray. Place 2 pieces of chicken in basket and spray the top with cooking spray.
  • Cook 5 minutes, turn and top each with 2 tablespoons marinara sauce, ¼ cup shredded mozzarella cheese, and 1 teaspoon Parmesan cheese. Cook 3 more minutes or until cheese is melted. Set aside and keep warm. Repeat with the remaining 2 pieces.
  • If your air fryer is larger you can cook all 4 breasts at once. Be sure to not overlap the breasts.

  1. I honestly have not tried this yet. Can this be made in a convection oven if you don’t have an air fryer? What temperature would you recommend?

  2. If you liked to bake this chicken, after step 2, bake for 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
