This main course salad is so easy to make and it’s really, really good.  It’s so healthy and satisfying, I could eat it several times a week and have it! One large salad, including dressing, has 236 calories and 13 grams of fat. So rich in fiber, each salad has 9 grams of fiber!

Ingredients

Ingredients for One Main Course Salad:

  • 3 cups romaine lettuce, chopped
  • cup cooked chicken, diced
  • ¼ cup corn, fresh off the cob or frozen and defrosted
  • ¼ cup tomatoes, chopped
  • ¼ cup orange, yellow or red bell pepper, chopped
  • ¼ cup avocado, diced
  • 2 tablespoons  The BEST Skinny Ranch Dressing (3 ingredients)  or your favorite bottled light ranch dressing
  • 1 tablespoon salsa

Instructions

  • Line a dinner size plate with lettuce. On top of lettuce, add the chicken, corn, tomatoes, bell peppers and avocado. In a small bowl, mix together the ranch dressing and salsa. Drizzle over the salad and serve.
  • This recipe can be doubled, tripled, and so on.
