So Yummy, Sloppy Joe Cauliflower Rice
This one-pan wonder is seriously a winner… Absolutely delicious!  A true comfort food classic remade healthier. No need for the bun. I’m using magical cauliflower rice. Each generous serving has 301 calories and 8 grams of fat if made with 99% fat-free ground turkey or extra lean ground beef. So hearty and easy, dinner will be on the table in 30 minutes!

Ingredients

  • 1 cup onions, diced
  • 1 cup red bell peppers, diced
  • 1 pound extra lean ground beef or 99% fat-free ground turkey, see shopping tips
  • 1 (16 oz.) bag cauliflower rice, see shopping tips
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 cup ketchup
  • cup water
  • 2 tablespoons tomato paste, see shopping tips
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • ¼ teaspoon red pepper flakes

Instructions

  • Place onions and red bell peppers on a microwave-safe plate or bowl. Cook in microwave for 3 minutes, to soften. Set aside.
  • In a large nonstick stick pan, add ground beef and cook over medium-high heat, to brown. Be sure to break up beef into a crumble as it cooks. Stir in cauliflower rice, olive oil, and garlic. Cook and stir for 5 minutes. Stir in ketchup, water, tomato paste, mustard, Worcestershire sauce, and red pepper flakes. Mix well. Simmer for 5 minutes or until veggies are soft. Stir often.
  • Serve in a bowl. Can be topped with shredded lettuce and tomatoes, if desired.

Shopping Tips
Trader Joe’s extra lean ground beef is a terrific, healthy choice. It has 130 calories and 4 grams of fat for 4 ounces. If you can’t find beef this lean, be sure to drain the fat in a colander after browning it. This step will cut the fat way down.
Trader Joe’s sells a 16-ounce bag of riced cauliflower. You will love it. It saves you a lot of time, not having to prep the cauliflower. In addition, many supermarkets, Target and Walmart carry Green Giant’s (16 oz.) bag of cauliflower crumble in the produce section.
If you hate wasting a whole can of tomato paste when a recipe calls for 1-2 tablespoons, try tomato paste in a tube. It can be found in the pasta sauce or canned tomatoes section of your supermarket. Store in the refrigerator for several months.

Prep Tips
To make riced cauliflower: wash and dry cauliflower. Remove core and coarsely chop into florets. Blot with paper towels to completely dry. Place half of cauliflower in a food processor and pulse until the cauliflower is small and has the texture of rice or couscous. Be sure to not over-process or it will get mushy. Add to a large bowl. Repeat processing with remaining cauliflower. Or, using the largest holes on a box cheese grater, grate each cauliflower floret into small pieces, similar to the size of a grain of rice. One head of cauliflower, shredded into very small pieces makes about 4-5 cups cauliflower rice. Any extra cauliflower rice, freezes great.

  1. Do you use regular ketchup in this recipie(Sloppy Joe Cauliflower Rice) When I put it the the WW recipie builder, I get more than 4 points per serving using 99% fat turkey. Thanks.

  2. Faye, this recipe does use regular ketchup. I checked the calculations and I still get 4 Freestyle points using 99% fat-free ground turkey.
