Happily most supermarkets sell lean ground beef. I used the 96% lean ground beef from Trader Joeโ€™s.
Sometimes I use an extra lean, grass feed beef. Most supermarkets sell this type of ground beef. Itโ€™s a wonderfully healthy choice.

Ingredients
  

  • 1 pound extra lean ground beef, see shopping tips
  • 1 egg
  • 1 cup Stove Top Cornbread Stuffing Mix (use the dry mix, do not make stuffing)
  • ยพ cup onions, diced
  • ยฝ cup barbecue sauce, divided
  • 1 tablespoon Worcestershire sauce
  • ยพ teaspoon Lawryโ€™s seasoning
  • ยฝ teaspoon garlic powder
  • Black pepper, to taste

Instructions
 

  • Preheat oven to 350 degrees. Line a baking sheet with foil and coat with cooking spray.
  • In a large bowl, add ground beef, egg, stuffing mix, onions,ย ยผ cupย barbecue sauce, Worcestershire sauce, Lawryโ€™s seasoning, garlic powder and a little black pepper. Mix well until thoroughly combined.
  • Place meatloaf mixture in the center of the baking pan. Shape into a 12 x 3 inch loaf by hand.
  • Spread remainingย ยผ cupย barbecue sauce evenly over top of loaf and down sides.
  • Bake 50 minutes. Remove from oven and let stand for 5 minutes before slicing. Cut into 12 slices.
