Skinny BLT Lettuce Boats

If you’re a fan of the classic BLT, bacon lettuce, and tomato sandwich, I think you’ll really enjoy this skinny twist!  I could eat these every day. Sooo good! Lettuce leaves make a fantastic vessel for these. And if you want to lower the carbs, skip the homemade croutons. Each main course serving (2 BLT lettuce boats) has 265 calories, and 10 grams of fat.

I used Trader Joe’s uncured-dry rubbed sliced bacon (no nitrates). Each slice has 30 calories. There are many brands sold in major supermarkets. Be sure to pick up healthier bacon that’s uncured with no nitrites. My Skinny Facts were based on each slice of bacon, 30 calories.
I love Milton’s multi-grain bread. I always have a loaf on hand. Most supermarkets sell it along with Trader Joe’s and Costco. Or, use your favorite bread to make the croutons. 
I used The Best Skinny Ranch Dressing (3 Ingredients) for this recipe. If you don't want to make it, use your favorite store-bought light ranch dressing.

Ingredients
  

  • 3 slices bacon, I used uncured, no nitrates
  • 1 slice whole grain or whole wheat bread
  • 1 tsp light butter or Smart Balance light
  • ¼ tsp garlic powder
  • ½ cup tomato, diced
  • 2 tbsps The BEST Skinny Ranch Dressing (3 ingredients, or store-bought light ranch)
  • 4 large romaine lettuce leaves
  • avocado slices, optional

Instructions
 

  • To Cook Bacon: Line a microwaveable plate with several paper towels. Place 3 bacon strips on the paper. Cover with paper towels.  Cook in microwave for 3-5 minutes until well done and crispy. Add all cooked strips to clean paper towels. Cool, and crumble.
  • To Make Croutons: Toast bread. Spread with 1 teaspoon light butter and sprinkle with a little garlic powder. Cut into bite size pieces. Set aside.
  • Stack 2 lettuce leaves and add both stacks to the place. Divide among the lettuce boats, tomatoes, crumbled bacon homemade croutons. Drizzle each with 1 tablespoon skinny ranch dressing. 
  • Serve with a fork and knife since it will be easier to eat. 
  • Although this recipe serves 2 lettuce boats for a main course and 1 for a side serving, this recipe can be easily multiplied into as many servings as desired.
