This hearty, main course salad is simply divine. It’s much skinnier than a typical Steak Caesar Salad since it’s made with lean steak, homemade multigrain croutons, and topped with a store-bought, light Caesar dressing. Each large salad has 365 calories and 15 grams of fat.

Shopping Tips
Choose lean beef such as top sirloin. Most supermarkets sell very lean, grass-fed steak. I bought mine at Trader Joe’s.
Most supermarkets carry Girard’s Light Caesar Dressing, Ken’s Steak House Lite Caesar dressing, or Cardini’s Light Caesar Vinaigrette. If you can’t find them, use your favorite light Caesar or light Italian style dressing.

Ingredients
  

Ingredients for Steak:

  • 1 (8 ounces) top sirloin steak, see shopping tips
  • 1 tablespoon Worcestershire sauce
  • Garlic powder, seasoning salt or salt, and black pepper

Ingredients for Croutons:

  • 1 slice multi-grain or whole wheat bread, I used Milton’s multi-grain
  • 1 teaspoon light butter or Smart Balance light
  • Garlic powder

Ingredients for Salad:

  • 6 cups romaine lettuce, chopped (3 cups per salad)
  • 1 cup cherry or grape tomatoes, halved
  • ¼ cup Girard’s Light Caesar Dressing, Ken’s Steak House Lite Caesar dressing or Cardini Light Caesar Vinaigrette, see shopping tips
  • 3 teaspoons Parmesan cheese, grated, for topping

Instructions
 

  • To Broil Steak: Preheat broiler. Line a baking pan with foil. Add steak. Drizzle with Worcestershire sauce and sprinkle with a little garlic powder, seasoning salt, or salt and black pepper. Place under broiler on top rack. Broil for 5 minutes. Remove from over, turn over and add more Worcestershire sauce, garlic powder, seasoning salt or salt, and black pepper. Place back in oven and broil 4-5 minutes for medium-rare. Cook longer for more well done. Remove from oven and transfer to cutting board. Let rest for 5 minutes before slicing into bite-size pieces.
  • To Cook Steak on Cooktop: Coat a small nonstick pan with cooking spray. Add steak and drizzle with Worcestershire sauce. Sprinkle with a little garlic powder, seasoning salt or salt and black pepper. Brown steak on both sides for about 5 minutes for medium-rare. Cook a little longer, if desired. Remove from pan and transfer to cutting board. Let rest for 5 minutes before slicing into bite-size pieces.
  • To Make Croutons: Toast bread. Spread with ½ teaspoon light butter and sprinkle with a little garlic powder. Cut into bite-size pieces. Set aside.
  • To Make Salad: Add lettuce and tomatoes to a large bowl. Toss with Caesar dressing. Divide among 2 dinner-size plates. Top each with ½ of steak pieces. Top each with ½ croutons. Sprinkle each with 1½ teaspoon of Parmesan cheese.
  • Serve at once.
