
This is such a fun, lunch, dinner or appetizer that all ages will love! For lunch or dinner serve 2-3 pizza bites per person with a salad. Each skinny, pizza bite has 110 calories, 2 grams of fat and 4 Blue WW Freestyle SmartPoints and 4 Green.
Ingredients
- ½ cup onions
- 1 cup cooked chicken, diced
- ⅔ cup barbecue sauce
- 1 small can (7.5 oz) Pillsbury buttermilk biscuits, see shopping tips
- ¾ cup (12 T) reduced-fat mozzarella cheese, shredded
Instructions
- Preheat oven to 400 degrees. Coat a (12-cup) regular muffin pan with cooking spray.
- In a small microwave safe bowl, add onions and cook for 1 minute to soften. Stir in chicken and barbecue sauce. Mix well. Heat for 30 seconds in the microwave.
- Open the package of 10 biscuits. Pinch off a small piece of each biscuit to create 2 more for a total of 12 biscuit. Shape each in the palm of your hand or on a board to form a circle to fit in the bottom of each muffin cup (to create a small pizza dough). You should have 12 circles of pizza dough. Place 1 biscuit in each muffin cup. The dough will only be on the bottom of each muffin cup. Add about 1 tablespoon of chicken/barbecue sauce mixture to each. Sprinkle each with 1 tablespoon cheese.
- Place muffin pan in oven and bake about 12 minutes, until golden brown. Using a spoon, remove them from the pan and serve warm.
