Grilled Chicken Margherita
Fire up your grill or your cook-top, I’ve got an easy, healthy Chicken Margherita topped with melted light mozzarella cheese, marinara sauce, and a tomato basil topping. It tastes like the ever-popular pizza version only on top of chicken instead of a crust. This makes a delightful low-carb dish. Each serving has 269 calories, 12 grams of fat and 4 Blue WW Freestyle SmartPoints, and 4 Green. Serve with my recipe for Skinny Garlic Green Beans.

Ingredients

  • 4 (5 oz each) boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • 4 slices light mozzarella or provolone cheese, see shopping tips
  • 3/4 cup pizza or marinara sauce, from a jar
  • ½ cup cherry or grape tomatoes halved
  • 1 tablespoon fresh lemon juice
  • ¼ cup packed basil leaves, thinly sliced
  • Salt and pepper, to taste

Instructions

  • In a large bowl combine chicken breasts, salt, pepper, olive oil, garlic powder, and Italian seasoning. Toss to combine.
  • To Grill Chicken: Cook chicken over medium-high heat for about 5-7 minutes on each side until cooked through. Top each piece of chicken with 3 tablespoons pizza sauce and a slice of cheese, close grill, and cook another minute or so until cheese is melted. Remove to a plate.
  • To Cook Chicken on Cook Top: To a large nonstick pan add seasoned chicken breasts. Cook for 4-5 minutes (depends on thickness). Turn over and continue to cook for 4-5 minutes. Remove chicken breasts to a baking pan. Top each breast with 3 tablespoons of pizza sauce and 1 slice of cheese. Place in preheated 400 degrees oven. Bake for 5 minutes, until cheese, is melted. Remove to a serving plate.
  • In a small bowl, toss together tomatoes, lemon juice, basil, and a little salt and pepper. Top each chicken breast with about 2 tablespoons tomato mixture. Serve immediately or it can be reheated in the microwave or oven.

Pizza Margherita (more commonly known in English as Margherita pizza) is a typical Neapolitan pizza, made with San Marzano tomatoes, mozzarella cheese, fresh basil, salt, and extra-virgin olive oil. 
In June 1889 a chef invented a dish called ”Pizza Margherita,” to honor the Queen and the Kingdom of Italy since the toppings–tomato(red), mozzarella (white), and basil (green)–represented the colors of its national flag
Olive Garden serves a Grilled Chicken Margherita with grilled chicken breasts topped with fresh tomatoes, mozzarella, basil pesto, and a lemon garlic sauce. If desired, you can top your chicken with store-bought pesto instead of pizza or marinara sauce.

I just discovered Sargento Ultra Thin Provolone Natural Cheese Slices. It has just 40 calories a slice. I used 2 slices for each chicken breast. Or use 1 slice of light mozzarella cheese or ¼ cup light shredded mozzarella cheese per chicken breast.
