Easy Peasy, Skinny Crock-Pot Chicken
This has all the fabulous flavors of a pot roast but made with chicken! It’s so simple and the chicken turns out super moist and flavorful. Perfect for any weeknight or Sunday night dinner. Each serving has only 217 calories and 2 grams of fat.

Ingredients

  • 6 chicken breasts (4 oz each) boneless, skinless (if breasts are larger, cut in half)
  • 1 (14.5 oz.) can diced tomatoes, slightly drained
  • 2 cups baby carrots, whole
  • 2 cups celery, sliced into large chunks
  • 1 cup onions, chopped
  • cup ketchup
  • 1 package Lipton Onion soup mix (dry mix)
  • 2 cloves garlic, minced
  • 1 (12 oz.) bottle or can of your favorite light beer, white wine or reduced-sodium chicken broth

Instructions

  • Place all ingredients in the crock-pot except the beer. Pour beer all over the top of ingredients. Cover and cook on high heat for 3 hours or low heat for about 6 hours. The cook time can vary based on your crock-pot.
  • To serve: Place 1 chicken breast on each plate and add about ½ cup vegetables and sauce.
  • Serve with baked potatoes or whole wheat toast, if desired. There is plenty of sauce to soak into the potato or bread. Yum! Any leftovers freeze great too.

    I just calculated again the points for blue and still got 1. I use a program called Spark Recipes to do the Skinny Facts and then calculate the WW points on this site-https://www.calculator.net/weight-watchers-points-calculator.html
