
Incredibly delicious chicken and very simple to make! First, the chicken is pan-seared in a richly flavorful honey lime garlic sauce. Next, it's baked in the oven with the sauce to create a juicy, tender center. And, ready in 30 minutes! Each serving has 226 calories and 8 grams of fat.
Ingredients
- 4 boneless skinless chicken breasts (4 ounces each)
- Salt and pepper to taste
- 4 tablespoons reduced-fat butter or Smart Balance Light, divided
- 3 tablespoons honey
- 1 tablespoon garlic, minced
- ¼ cup fresh lime juice, divided (juice from 2-3 limes)
Instructions
- Preheat oven to 375 degrees.
- Season chicken with a little salt and pepper to taste. In a large nonstick pan, over medium heat melt 2 tablespoons butter. Add honey and 2 tablespoons lime juice. Stir until bubbly. Add chicken and cook for 2-3 minutes on each side until browned. Transfer chicken to a glass or metal baking dish.
- Add the remaining 2 tablespoons butter, 2 tablespoons lime juice, and garlic. Stir until melted and a little bubbly. Spoon sauce from the pan over each piece of chicken. Use all the sauce.
- Bake chicken in oven for about 15 minutes until cooked through. Add lime slices and cilantro for garnish, if desired.
