
All the delicious flavors you love from lasagna smothered on top of chicken breasts and baked until velvety goodness. No noodles here. Each serving has 311 calories, 9 grams of fat, and 6 Blue WW Freestyle SmartPoints, and 6 Green. I’m pretty sure you are going to LOVE this chicken!

Ingredients
2 chicken breasts (1 pound)
1 cup fat-free ricotta cheese or cottage cheese
1 egg
3 teaspoons Italian seasoning, divided
2 teaspoons fresh garlic, crushed
½ teaspoon salt
1 cup light shredded mozzarella, divided
1¼ cup jarred pasta, marinara or pizza sauce, I used Classico pizza sauce, divided
Salt and Pepper, to taste
4 teaspoons Parmesan cheese, grated
Instructions
1. Preheat oven to 400 degrees. Cut each chicken breast in half to create 4 breasts. Butterfly chicken breasts (split each chicken breast horizontally and open it like a book) Place all 4 chicken breasts in a lightly greased baking dish.
2. In a small mixing bowl, stir together ricotta cheese, egg, 2 teaspoons Italian seasoning, garlic, salt, and ¾ cup mozzarella cheese. Spoon about ¼ cup of sauce on top of each chicken breast. Spread ricotta mixture on top of sauce. Drizzle remaining pasta sauce over chicken. Top with each with 1 tablespoon mozzarella cheese. Sprinkle each with 1 teaspoon Parmesan cheese. Finally, top each with remaining Italian seasonings and season with salt and pepper.
4. Bake in the oven for 25-30 minutes, until chicken is cooked through.
5. This recipe can easily be doubled or tripled. Leftovers freeze great!

I notice the WW purple plan points are missing on some of your recipes, but the blue and green are there. Any reason?

I’m so sorry but at this point I’ll only be including Blue and Green points. For all of these years, I use a different program than WW to input all of my recipes to do the nutrition facts and points.
I have hundreds of recipes and don’t have the time to input them into WW to make the calculations for the purple plan. Maybe in the future.

I love your recipes and have used many of them but I wish you would compact your recipes and include a way to delete the picture so I don’t have to pay to print two pages. Many other sites I use make sure their recipe can be printed on one page.
” Spread sauce on 1/2 of each chicken breast” What happens to the other half of each breast?
Sorry Barb, I see where it sounds confusing. I just fixed it. It now says, Spoon about ¼ cup of sauce on top of each chicken breast.
