Crunchy Low Fat Sausages Topped With Homemade Skinny Honey Mustard Coleslaw
What’s your favorite way to top your hot dog or sausage?  Usually, I love mine topped with ketchup, mustard, and relish!  But I’m changing things up by topping these low-fat sausages with a yummy honey mustard slaw.  I’m so happy many supermarkets today sell reduced-fat, precooked, chicken, or turkey sausages.  Most of the low-fat hot dogs aren’t very tasty.  My favorite reduced-fat sausage is the kind still in the casing.  The casing adds a snap when you bite into it.  You can BBQ, broil, pan-fry, broil or grill them on an indoor grill, such as the George Foreman. This meal comes together in minutes and is so crunchy and delicious. Each has 325 calories and 13 grams of fatincluding the slaw and bun.

Ingredients

  • 6 cups shredded white cabbage, 1 (10 oz) bag
  • ¼ cup light mayonnaise, I like Best Foods (Hellman’s) Light
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons spicy brown mustard
  • ½ tablespoon honey
  • ¼ teaspoon prepared white horseradish
  • 6 fully cooked reduced-fat chicken or turkey sausages, I used 1½ packages of Trader Joe’s Garlic Herb Chicken Sausages, see shopping tip
  • 6 whole wheat buns, see shopping tips

Instructions

  • To make coleslaw dressing: In a small bowl, mix together the mayonnaise, vinegar, mustard, honey, and horseradish.  Refrigerate until ready to serve.  See prep tip below.
  • To cook sausages: To cook sausages-Cut each sausage in half and grill on the barbecue until hot on both sides or cook on a George Foreman grill for 4-5 minutes.  If you boil them, don’t cut in half until after boiling in water for about 5 minutes, until hot.   • Place each cooked sausage in a bun and top with coleslaw.  You can also serve coleslaw on the side, if desired.
  • This recipe can be doubled, tripled, and so on.

One Trader Joe’s Garlic Herb Chicken Sausage has 130 calories and 7 grams of fat.  They’re all-natural with no antibiotics.
Each serving of my skinny honey mustard coleslaw has 55 calories, 2.7g fat, 2g protein, 8g carbs, 2g fiber, 159mg sodium, 2g sugar.

Shopping Tips

Trader Joe’s has a terrific selection of reduced-fat chicken sausages.  I love their garlic herb but they sell other varieties such as, chicken apple, spicy Italian, and spicy jalapeno.  Each 12 oz package contains 4 fully cooked sausages.  The garlic herb contains 130 calories, 7g fat, 17g protein, 0g carbs, 0g fiber, 510mg sodium, 0g sugar.
If you don’t have a Trader Joe’s in your town look for other reduced-fat brands in your supermarket.  I also like Jody Maroni’s Smoked Chicken Apple Sausages.  These have 200 calories and 9 grams of fat or Aidells, Chicken & Apple Sausage at 160 calories and 10 grams of fat.
My favorite hot dog’s buns are Trader Joe’s Honey Wheat Buns. Each bun has 140 calories, 3 grams of fat, and contains 6 grams of fiber. Another tasty one is the Oroweat whole wheat hot dog bun.  Each has 190 calories, 3.5 grams of fat, and 8g fiber.

Prep Tip

The honey mustard coleslaw dressing can be made a few days in advance and refrigerated.  To keep the coleslaw crunchy, toss the cabbage with the dressing just before serving.
