
For a delicious and easy ham, try this crock-pot recipe. It’s much lighter tasting than the typically honey-baked ham. That type of ham taste amazing but is usually smothered with tons of honey and brown sugar. Here the delightful flavors come from a small amount of honey, pineapple juice, and pineapple chunks. Each serving, including carrots and pineapple, has 247 calories and 9 grams of fat.
Ingredients
- 1 Trader Joe’s spiral cut, uncured (about 4 pounds, fully cooked) or your favorite, see shopping tips
- 1 cup onions, chopped
- 1 (16 oz.) bag baby carrots, cut each in half or keep whole if desired
- 1 (8 oz.) can pineapple chunks, unsweetened
- ⅓ cup honey
- 1 (6 oz.) can pineapple juice, unsweetened
- 2 tablespoons reduced-sodium soy sauce
- 2 teaspoons fresh garlic, minced
- Black pepper, to taste
Instructions
- Place carrots in a microwave-safe bowl. Add a small amount of water. Cover and cook in microwave for 2-3 minutes, to slightly soften. Do not cook until completely soft. They will finish cooking in the crock-pot. Drain water.
- Place ham, flat side down, in a large crock-pot. If your ham comes with a glaze packet, throw it out along with any plastic pieces that cover the bone. Add softened carrots all over the sides and sprinkle onions all over top and sides. Pour the can of pineapple chunks, with juice all over the carrots.
- In a small bowl, whisk together pineapple juice, honey, soy sauce, garlic, and a little pepper. Pour all over top of ham and over carrots and onions.
- Cover and cook on low heat for 3 hours. Baste ham with juices from bottom of crock-pot, a few times throughout the cooking.
