Cracker Barrel Hash Brown Casserole Made Skinny (Copy-Cat)
This skinny remake is so cheesy, rich tasting, and darn right delicious! Makes a wonderful side dish for eggs or a yummy side dish for dinner. Add diced chicken to create a fabulous main course meal. Each side serving has 100 calories and 4 grams of fat.

Ingredients

  • 5 cups frozen hash browns, not thawed
  • 1 cup onions, finely chopped
  • ¼ cup light butter or Smart Balance Light, melted
  • ½ cup fat-free sour cream
  • ½ of a 10.5 oz can Campbell’s Healthy Choice cream of chicken soup
  • Lawry’s seasoning salt and black pepper, to taste
  • 1 cup light cheddar cheese, shredded
  • 2 tablespoons green onions, sliced (green parts only), optional topping

Instructions

  • Preheat oven to 350 degrees. Coat a 9 x 9-inch casserole dish with cooking spray.
  • In a large bowl, mix all ingredients together except cheese and green onions. Spread out in casserole dish. Sprinkle cheese evenly over top. Cover with foil and bake for 30 minutes. Remove foil and continue to bake for 30 minutes until golden brown.
  • Garnish with green onions, if desired.
