At Cheesecake Factory, this dressing has always been my absolute favorite! The blend of the peanut butter, lime, cilantro, and a little sesame oil is amazing!  They serve it with their Santa Fe Salad but it’s wonderful on many different salads, as a dip or drizzled over steamed or roasted veggies. Recently, I went to work to create a lightened-up version. Mission accomplished! My skinny version is over-the-top delicious and so rich-tasting!!! Cheesecake’s dressing is very fattening but my skinny version is much lower in calories and fat. Instead of the base being pure oil, I used my skinny ranch as the base and it works great. I can’t wait for you to try it!  Each tablespoon has 63 calories and 4 grams of fat. Such a power dressing a little goes a long way.

Ingredients

  • ½ cup fresh cilantro leaves (stems removed), lightly packed
  • cup peanut butter (I used no salt, chunky)
  • 3 cloves garlic, peeled
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar or red wine vinegar
  • 1 tablespoon fresh lime juice
  • 2 teaspoons sesame oil
  • ¼-½ teaspoon Sriracha hot sauce or your favorite hot sauce, to taste
  • 1 cup  Skinny Ranch Dressing

Instructions

  • In a blender, add all the ingredients, except the ranch dressing. Blend until smooth. Pour into a small bowl. Be sure to use a rubber spatula to scrape down all the sides and add to bowl. Stir in ranch dressing and mix well to thoroughly combine.
  • Store in an airtight container in the refrigerator. It should keep about 1 week.
