This is such a fun, lunch, dinner or appetizer that all ages will love! For lunch or dinner serve 2-3 pizza bites per person with a salad. Each skinny, pizza bite has 110 calories, 2 grams of fat and 4 Weight Watchers Freestyle SmartPoints.

½ cup onions
1 cup cooked chicken, diced
⅔ cup barbecue sauce
1 small can (7.5 oz) Pillsbury buttermilk biscuits, see shopping tips
¾ cup (12 T) reduced-fat mozzarella cheese, shredded
1. Preheat oven to 400 degrees. Coat a (12-cup) regular muffin pan with cooking spray.
2. In a small microwave safe bowl, add onions and cook for 1 minute to soften. Stir in chicken and barbecue sauce. Mix well. Heat for 30 seconds in the microwave.
3. Open the package of 10 biscuits. Pinch off a small piece of each biscuit to create 2 more for a total of 12 biscuit. Shape each in the palm of your hand or on a board to form a circle to fit int the bottom of each muffin cup (to create a small pizza dough). You should have 12 circles of pizza dough. Place 1 biscuit in each muffin cup. The dough will only be on the bottom of each muffin cup. Add about 1 tablespoon of chicken/barbecue sauce mixture to each. Sprinkle each with 1 tablespoon cheese.
4. Place muffin pan in oven and bake about 12 minutes, until golden brown. Using a spoon, remove them from the pan and serve warm.
Makes 12 pizza bites
You can find Pillsbury biscuits in most large supermarkets in the refrigerated section where they display all the “ready to bake” items. Look for the small cans (7.5 oz) each. Many times they are sold in a 4- pack.
I love Sweet Baby Rays barbecue sauce for this recipe. I also like Trader Joe’s all natural barbecue sauce. Or use your favorite.
