Ingredients
Ingredients for Meatloaf:
- 1 pound extra-lean ground beef (I use Trader Joe’s (96%) lean or extra lean grass feed beef)
- 1 cup jarred pasta sauce, I used Classico tomato basil
- ½ cup Panko bread crumbs
- 1 cup onions, diced
- 1 large egg
- ¾ teaspoon garlic powder
- ¾ teaspoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Ingredients for Topping:
- ½ cup jarred pasta sauce
- 3 tablespoons Parmesan cheese, grated
- 3 strips of bacon, see shopping tips
Instructions
- Preheat oven to 350 degrees. Line a baking pan with foil and coat with cooking spray.
- In a large bowl, combine beef, 1 cup pasta sauce, bread crumbs, onions, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until completely combined.
- Place meatloaf mixture in center of the baking pan and by hand, shape into a 12 x 4-inch loaf. Spread remaining ½ cup pasta sauce over top of the meatloaf. Evenly sprinkle the top with Parmesan cheese and line 3 stripes of bacon on top.
- Bake for 1 hour. Let stand 5 minutes. Cut the loaf into 12 slices.

Makes 6 servings. Each serving 2 slices.
