Wait until you taste this yummy meatloaf!  It’s a perfect texture (moist, not crumbly), and baking it with strips of bacon creates a dreamy delicious flavor! Each serving has only 170 calories 5 grams of fat and 4 Blue WW Freestyle SmartPoints and 4 Green. If you’re tired of making the classic meatloaf give this new one a try!

Prep Time: 15 minutes

Cook Time: 1 hour

Ingredients for Meatloaf:

1 pound extra-lean ground beef (I use Trader Joe’s (96%) lean or extra lean grass feed beef

1 cup jarred pasta sauce, I used Classico tomato basil

½ cup Panko bread crumbs

1 cup onions, diced

1 large egg

¾ teaspoon garlic powder

¾ teaspoon Italian seasoning

¼ teaspoon salt

¼ teaspoon black pepper

Ingredients for Topping:

½ cup jarred pasta sauce

3 tablespoons Parmesan cheese, grated

3 stripes of bacon, see shopping tips

1. Preheat oven to 350 degrees. Line a baking pan with foil and coat with cooking spray.

2. In a large bowl, combine beef, 1 cup pasta sauce, bread crumbs, onions, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until completely combined.

3. Place meatloaf mixture in center of the baking pan and by hand, shape into a 12 x 4-inch loaf. Spread remaining ½ cup pasta sauce over top of the meatloaf. Evenly sprinkle the top with Parmesan cheese and line 3 stripes of bacon on top.

4. Bake for 1 hour. Let stand 5 minutes. Cut the loaf into 12 slices.

Makes 6 servings. Each serving 2 slices.

Shopping Tips
There are many healthier bacon choices these days. They’re uncured with no nitrates. I like Oscar Mayer Select Natural.  Most supermarkets carry it. Another I like is Applegate Farms Natural Sunday Bacon. Many supermarkets carry this brand. I bought it at Vons/Safeway and Whole Foods. Here’s the link to their website:
