I love to make a big pot of chili this time of year. This one smells amazing while slow cooking in your crock-pot. The sweet potatoes add a fabulous flavor and add a wonderfully healthy addition to this fiber rich chili. Each large serving has 311 calories 7 grams of fat and 7 Weight Watchers FreeStyle SmartPoints. Enjoy a bowl for dinner, eat it for lunch the next day and freeze the extras for another night.
Prep Time: 15 minutes
Crock-Pot Time: Low Heat for 6 to 8 hours or High Heat 3-4 hours.
1 pound ground turkey
1 teaspoon fresh garlic, minced
3 cups (~2 large) sweet potatoes, peeled and cut into bite-sized pieces, roughly same size
1 (15 oz) can tomato sauce or 2 cups jarred tomato sauce
1 (15 oz) can petite diced tomatoes
1 (15oz) cans pinto beans, rinsed and drained
1 cup onions, diced
1 cup carrots, chopped
¼ cup water
2 tablespoons chili powder
2 teaspoons cumin
1 teaspoon garlic powder
⅛ teaspoon red pepper flakes
Reduced-fat shredded cheese (optional topping)
1. Brown ground turkey with garlic in a large nonstick pan. Cook until no longer pink. Drain any fat. Add turkey to crock-pot. Stir in remaining ingredients and mix well to combine. Cover and cook on Low Heat for 6-8 hours or High Heat 3-4 hours.
2. Serve chili with any chili fixings that you like (fat-free sour cream, chopped cilantro, diced onions, tomatoes, sliced avocado, hot sauce and such)
