skinny-eggnog-latte

Just 3 ingredients to this pure holiday yumminess! And you don’t need any fancy equipment either. The foamy milk is created in the blender in just 20 seconds. Each skinny remake latte has 161 calories, 3 grams of fat, 4 Weight Watchers Points Plus and 8 Weight Watchers SmartPoints. It’s much lower in fat and calories than a Starbucks Eggnog Latte made with nonfat milk. Enjoy this dreamy drink!

Prep Time: 10 minutes

Ingredients for Latte

⅔ cup strong brewed coffee or decaf, see shopping tips

⅔ cup light eggnog, see shopping tips

1 package Splenda, Equal, Truvia (Stevia) or your favorite sugar substitute

Dash of nutmeg, for topping, optional

Instructions

1. Brew coffee stronger than usual. In a small pot, add light eggnog, sweetener and heat over medium high heat. Stir often until hot.

2. Transfer to a blender and process for about 15-20 seconds until foamy. If you don’t have a blender, don’t worry. Just whisk the mixture in the pot continuously with a wire whisk until foamy.  Pour brewed coffee into a coffee mug and pour hot milk mixture over coffee. Stir to blend.

3. Top with nutmeg or cinnamon, if desired

Makes 1 (1½ cups) serving

Shopping Tips
I like to make this drink using Starbucks Coffee (k-cup) for the Keurig machine. Most supermarkets and Target sell this yummy coffee. Or, use your favorite coffee in a regular coffee maker. Click here for K-cups at Target: http://bit.ly/1x451dx

Light eggnog (reduced-fat and calories) can be found in most supermarkets or Trader Joe’s.
