Springtime Ham, Asparagus and Cheese Melt
Sometimes the simple to prepare meals are the tastiest.  This open-faced delight surely delivers.  First, I’ve layered a skinny ham salad, steamed asparagus and reduced-fat cheese on top of toasted garlic bread. Next, placed in the oven to melt.  It might sound like a strange combination but wait until you taste it.  Each delectable serving has 221 calories and 7.5 grams of fat. It’s delicious and perfect to serve for brunch or lunch.

Ingredients

  • 4 slices sourdough wheat bread or cracked wheat sourdough bread
  • 4 tablespoons reduced-fat butter
  • 1 tablespoon garlic powder with parsley (I like Lawry’s)
  • 2 cups lean ham or turkey ham, chopped (from a thick slice)
  • ¼ cup light mayonnaise (I like Best Foods Light)
  • 2 tablespoons mustard
  • 16 asparagus spears, steamed
  • 6 slices reduced-fat Swiss or Jarlsberg cheese, cut in half

Instructions

  • Toast each slice of bread.  Spread each with ½ tablespoon of butter.  Sprinkle each with garlic powder. Cut each piece in half and place on a baking sheet.
  • In a small bowl, mix together ham, mayonnaise and mustard. Place ham salad on top of garlic bread.  Place 2 asparagus spears over the ham salad.  Top each with cheese slices.
  • Broil 3 to 4 minutes or until thoroughly heated and lightly browned.  Serve with a fork and knife.

Notes

Makes 8 halves (serve 1 piece per person with a salad)

Food Fact

Ham is the favorite choice at Easter.  In America though, lamb and turkey are gaining popularity.

Shopping Tip

Be sure to start with a chunk of ham not thinly sliced.  The ham salad should be chunky.
