Skinny Tip of the Day

One small red, yellow or orange bell pepper provides three times the recommended daily allowance of vitamin C-way ahead of citrus! All bell peppers contain a nice dose of fiber, beta carotene, vitamin B6 and folic acid. Like tomatoes, red peppers contain lycopene, a carotene that helps to protect against certain cancers and heart disease. Yellow peppers are rich in lutein, which promotes healthy vision.

There are numerous things to do with these colorful gems…I like to munch on them for a healthy snack, add to salads or scramble with egg whites.
