I tested this healthy, skinny dip on my girlfriends the other night. It received rave reviews and they all asked for the recipe! Itโ€™s easy peasy to make since you start with a container of your favorite store-bought hummus.ย Each serving has 55 calories and 3 grams of fat.ย Itโ€™s so colorful and fresh tasting. I have a feeling itโ€™s going to become your โ€œgo-toโ€ dip!

Shopping Tips
I used Trader Joeโ€™s Roasted Garlic Hummus. Itโ€™s fantastic and comes in an 7 ounce container. Not a fan of roasted garlic, choose your favorite. Most supermarkets sell a nice variety of prepared hummus dips. If you canโ€™t find an 7 ounce container, use 1 cup of your favorite hummus.
Fat-free feta cheese is sold in most supermarkets and Trader Joeโ€™s.

Ingredients
  

  • 1 (7 ounce, about 1 cup) container prepared hummus, see shopping tips
  • โ…“ cup cucumber, chopped
  • โ…“ cup tomatoes, chopped
  • 5 pitted kalamata olives, or black olives, chopped
  • 3 tablespoons fat-free feta cheese, crumbled
  • 1 teaspoon red wine vinegar or any white vinegar drizzled over top of dip, optional
  • Pita chips for serving, see shopping tips

Instructions
 

  • Using a rubber spatula, spread hummus in shallow serving dish about 7-8 inches in diameter.
  • Top the hummus with cucumbers, tomatoes, olives and feta cheese.
  • Cover and refrigerate until ready to serve. This dip can be made up to 24 hours in advance.ย 
  • Serve with pita chips and cucumber rounds, if desired.
