
Asian meets Mexican with these fantastic taquitos! Who says you can’t use egg rolls instead of tortillas? These egg rolls are stuffed with a taco filling and rolled up. Not only do they make a delicious dinner, but they’re also a fun appetizer. Each egg roll taquito has 111 calories and 2 grams of fat.
Ingredients
- 1 pound extra-lean ground beef, see shopping tips
- 1 cup onions, diced
- 1 (1 oz.) packet taco seasoning, I like Lawry’s or McCormick
- ⅔ cup water
- 1 cup frozen corn, defrosted or fresh
- 8 Egg Roll Wrappers, I used 1 package of Twin Dragons, see shopping tips
- 1 cup light cheddar cheese or light Mexican blend
- Olive oil spray
Ingredients for Dipping: optional
- Skinny ranch
- Salsa
- Guacamole
Instructions
- In a large nonstick pan, add ground beef and onions. Cook, breaking up the beef into a crumble. Continue to brown the beef until cooked through. Drain any fat from pan. Stir in taco seasonings, and water. Bring to a boil, turn down to low heat and simmer for 10 minutes. Stir in 1 cup corn. Note-you’ll only use 1 cup taco meat for this recipe. Freeze the remaining for another use, see tips below.
- Preheat air fryer to 380 degrees.
- Lay 1 egg roll wrapper out flat. Add a little water around the rim of the egg roll. Add 2 tablespoons of beef mixture on one side of egg roll. Top with 1 tablespoon of cheese. Start with the end where the meat is and tightly roll up to form a taquito. Continue rolling the remaining ones.
- Spray the top with a little olive oil spray. Cook in air fryer for 5-6 minutes, turn over and continue to cook for about 5 minutes until desired crispy. Depending on the size of your air fryer, you might have to cook in 2 batches.
- To Bake Them: Preheat oven to 425 degrees. Line a baking pan with foil or parchment paper. Spray a little olive oil spray. Lay egg rolls seam side down on a prepared pan. Lightly spray tops of egg rolls with olive oil spray. Bake for 10-15 minutes until golden and crispy.

The best way is to separate them using waxed or parchment paper before freezing, This is to prevent sticking together when thawing. Store in a freezer bag.
