
Oh boy…This breakfast/brunch recipe is dreamy delicious! And it’s so easy to make. The entire family will love it! Great to make over the weekend but so quick, you can easily enjoy it during the week. Although my recipe calls for blueberry preserves, you can use strawberry, blackberry, or raspberry. Each fiber-packed serving has only 166 calories and 2 grams of fat.
Ingredients
Ingredients for Stuffed French Toast:
- 2 whole-wheat sandwich thins, I used Oroweat, see shopping tips
- 2 tablespoons fat-free cream cheese, see shopping tips
- 2 teaspoons reduced sugar blueberry preserves, see shopping tips
- ½ cup fresh blueberries or frozen and thawed, sliced in half
- 1 egg white
- 1 teaspoon reduced-fat butter or Smart Balance Light spread
Ingredients for Topping:
- ½ teaspoon powdered sugar
Instructions
- Spread the bottom inside piece of each sandwich thin with 1 tablespoon cream cheese. On top of cream cheese, spread 1 teaspoon of blueberry preserves on each. Place ¼ cup sliced blueberries on top of preserves on each. Top each with the remaining sandwich thin to create a sandwich.
- Add the egg white to a shallow bowl. Dip both sandwiches into the egg white, making sure to coat both sides.
- Coat a large nonstick pan with cooking spray. Melt 1 teaspoon reduced-fat butter and swirl around bottom of pan. Add 2 sandwiches, cook about 2½ to 3 minutes on medium-high heat, until golden brown. Using a spatula, turn over and cook the undersides for about 1-2 minutes, until golden brown.
- Sprinkle top of each with powdered sugar. Plate each and serve with a fork and knife.

I used Trader Joe’s organic reduced sugar blueberry preserves. Each tablespoon has only 30 calories. If you can’t find a reduced sugar jam, use regular. This recipe calls for such a small amount. In addition, if you can’t find blueberry, strawberry, blackberry, or raspberry preserves will taste yummy too. Fat-free cream cheese is available in a tube or block of cheese.
Prep Tips
If you’re making more than 2, place cooked sandwiches on a baking sheet and keep warm in oven while cooking the others. Sprinkle with powdered sugar just before serving.
