I adore this delectable salad and make it all the time. Itโ€™s so colorful and full of texture and flavor. I especially love adding assorted fruits, a little chopped nuts and cheese to salad greens.ย  These flavors work really great together whether youโ€™re serving it with turkey, beef, chicken or ham.ย  This salad comes together really quickly since Iโ€™m using a store bought light dressing.ย ย The skinny for one serving is 113 calories and 5.5 grams of fat.ย Serve this as a first course salad or as a vegetarian salad for lunch. Toss in some chicken and itโ€™s hearty enough as a main course salad for dinnerโ€ฆ

Ingredients
  

  • 1 bag spring mix or field greens
  • 1 large red or green apple, cored and chopped
  • ยฝ cup red grapes, sliced in half
  • ยฝ cup fresh blueberries
  • ยผย  cup walnuts or pecans, chopped
  • ยผ cup dried cranberries
  • ยผ cup Gorgonzola cheese, crumbled, reduced-fat feta cheese or Parmesan cheese, grated
  • ยผ cup Trader Joeโ€™s Champagne Pear Vinaigrette Dressing or Girardโ€™s Light Champagne Vinaigrette, see shopping tip

Instructions
 

  • In a large serving bowl, add all the ingredients except the dressing. Refrigerate until ready to serve.
  • When ready to serve, toss in salad dressing. Start with ยผ cup.ย  Add more dressing, if desired.
  • This salad can easily be doubled, tripled, etc.
