
Breakfast for dinner…Sure thing with this super delicious one pan wonder! It’s so hearty and satisfying. Of course it would be great for breakfast too. It comes together easily if you first gather and prep all the ingredients, and have them next to the pan. Each serving has 290 calories and 7 grams of fat.
Ingredients
- 4 slices bacon, see shopping tips
- 1 cup onions, diced
- 1 cup red bell pepper, diced
- 4 cups sweet potatoes, peeled and diced into bite size cubes (~ 2 large potatoes, about 10 oz each)
- Season to taste with garlic powder, salt, pepper and other seasonings such as Trader Joe’s everyday seasoning, if desired
- 2 cups baby spinach leaves, packed
- 4 large eggs
Instructions
- Add bacon to a large nonstick pan. Cook until golden and crispy. Keep bacon grease in pan. Using a fork, remove bacon to a plate lined with paper towels. Set aside.
- To the same pan, add diced onion and red bell pepper and saute for a few minutes, to soften. Stir in diced sweet potatoes and add desired seasonings. Cook sweet potatoes for about 10 minutes, until soften. Stir often. Place a lid on the pan and continue to cook for about 5 minutes until sweet potatoes are fork tender.
- Uncover pan and crumble in bacon. Stir in spinach. Blend well. Continue to cook for a few minutes until spinach is wilted. Use a spatula to create 4 wells in the potato mixture. Crack an egg into each well and cook, covered, 2-4 minutes until eggs are cooked to your liking. If you like your eggs sunny-side up, leave the pan uncovered while they cook.
- Using a large spatula, divide among 4 bowls. Serve immediately.
Notes
Makes 4 servings. Each has 1 egg and about 1 cup sweet potatoes plus spinach, onions and bell peppers.

If you like your eggs sunny-side up, leave the pan uncovered while they cook. Break the eggs into a small dish before adding to the pan. It’s easier to remove stray shell pieces if they get into the egg.
