Green Beans Amandine

This is a fresh skinny twist on this popular side dish. I’m making a little glaze and sautéing the almonds first then drizzling over freshly steamed beans.  They’re delicious in a dash.  The skinny for each serving: 89 calories and 7 grams of fat.

Green beans are also called string beans or snap beans.  The “string” in string beans can seldom be found today in modern varieties.

Shopping Tip
Choose green beans that are firm, smooth, bright colored.  Although they are available in markets year round, they’re in season and at their best summer through early fall

Storage Tip
Do not wash the beans until ready to use.  Store refrigerated in a plastic bag for up to 4 days.

Ingredients
  

  • 1 pound fresh green beans, trimmed
  • tablespoons reduced-fat butter or Smart Balance Light
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinaigrette
  • ¼ teaspoon fresh ground pepper
  • ¼ teaspoon  salt or to taste
  • ¼ cup sliced, chopped or slivered almonds

Instructions
 

  • In a large nonstick pan add 1-inch of water and trimmed green beans.  Bring water to a boil, turn down to medium and cook uncovered until beans are tender (5-7 minutes).  Drain.
  • Place green beans on a serving platter and keep warm.
  • Add butter to pan and melt.  Stir in olive oil, vinegar, salt and pepper.  When mixture begins to sizzle, stir in almonds.
  • Drizzle sauce over warmed beans and serve.
