Green Beans Amandine
This is a fresh skinny twist on this popular side dish. I’m making a little glaze and sautéing the almonds first then drizzling over freshly steamed beans. They’re delicious in a dash. The skinny for each serving: 89 calories and 7 grams of fat.

Green Beans Amandine
Ingredients
- 1 pound fresh green beans, trimmed
- 2½ tablespoons reduced-fat butter or Smart Balance Light
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinaigrette
- ¼ teaspoon fresh ground pepper
- ¼ teaspoon salt or to taste
- ¼ cup sliced, chopped or slivered almonds
Instructions
- In a large nonstick pan add 1-inch of water and trimmed green beans. Bring water to a boil, turn down to medium and cook uncovered until beans are tender (5-7 minutes). Drain.
- Place green beans on a serving platter and keep warm.
- Add butter to pan and melt. Stir in olive oil, vinegar, salt and pepper. When mixture begins to sizzle, stir in almonds.
- Drizzle sauce over warmed beans and serve.
