
It’s a one pan breakfast wonder! When I created this scramble, my husband and I enjoyed it so much we had it 3 days in a row. You’ll see…It’s so easy to make and so very satisfying. Each large serving has 207 calories and 6 grams of fat. Enjoy your breakfast!
Ingredients
- ¾ cup onions, diced
- 1½ cups frozen hash browns, see shopping tips
- Cooking spray
- 2 tablespoons reduced fat butter or Smart Balance light
- ½ teaspoon Lawry’s seasoning salt or salt
- Black pepper, to taste
- 6 egg whites (¾ cup if using all whites from a carton)
- ½ cup lean ham or turkey ham (1.5 oz.) diced, see shopping tip
- Tomato slices for serving
Instructions
- Add onions to a microwave safe plate and cook in microwave about 1 minute to soften. Defrost potatoes in microwave for about 1 minute.
- Coat a nonstick pan with cooking spray. Melt butter in pan. Add potatoes, onions, seasoning salt and black pepper. Saute until potatoes are golden brown. Stir often and brown on both sides (about 8 minutes). Stir in egg whites and ham. Scramble egg whites, ham and potatoes together until eggs are completely cooked.
- Divide among 2 plates. Serve with tomato slices.

Frozen hash brown potatoes are sold in most supermarkets. They contain no fat, just shredded potatoes. I used Ore Ida’s frozen, plain, shredded hash browns. One serving (1¼ cups) has 70 calories, 0g fat, 0g chol, 10g carbs, 1g protein, 1g fiber, 12mg sodium, 0g sugar I used a package of delicious lean ham I bought at Trader Joe’s. It’s uncured and contains no nitrates! Most heath food markets sell this type of healthy ham. Turkey ham would also work for this recipe.
