Real sweet potatoes have a much lighter colored skin and pale yellow inside. Theyโ€™re not nearly as sweet, moist or flavorful.

Ingredients
  

  • 2 small sweet potatoes (yams), about 6 ounces each, 5โ€ long, see shopping tips
  • 2 tablespoonsย  Best Skinny Ranch Dressingย or use your favorite
  • 2 teaspoons Parmesan cheese, grated

Instructions
 

  • Preheat oven to 350 degrees. Wash and pat dry each potato and pierce with a fork. Wrap each in foil. Bake in oven for 50-60 minutes, until soft.
  • Unwrap, cut open and mash in 1 tablespoon of ranch dressing in each. Top each with 1 teaspoon Parmesan cheese.
