Shopping Tips
In the US most people call the kind of potatoes I’m using for this recipe, sweet potatoes but I’m really talking about yams in the US.  Restaurants use yams too but call them sweet potato fries. They’re the darker skinned potatoes with a deep orange center as opposed to most of the sweet potatoes found in our markets. Real sweet potatoes have a much lighter colored skin and pale yellow inside. They’re not nearly as sweet, moist or flavorful.

Ingredients
  

  • 2 small sweet potatoes (yams), about 6 ounces each, 5” long, see shopping tips
  • 2 tablespoons  Best Skinny Ranch Dressing or use your favorite
  • 2 teaspoons Parmesan cheese, grated

Instructions
 

  • Preheat oven to 350 degrees. Wash and pat dry each potato and pierce with a fork. Wrap each in foil. Bake in oven for 50-60 minutes, until soft.
  • Unwrap, cut open and mash in 1 tablespoon of ranch dressing in each. Top each with 1 teaspoon Parmesan cheese.
