I’m such a fan of main course salad! And springtime is all about lighter recipes. I love the fact that you get to eat a lot of food and be healthy and very satisfied! At California Pizza Kitchen they have 2 of my favorites, CPK’s BBQ Chicken salad, and Thai Crunch salad. I’m excited to share my copycat versions. Plus, CPK’s Provencal Salad, which is not on the menu but in their 1st cookbook. Although it has cheese in it, you could also add some chicken, steak, or nuts to add more protein.
