Skinny Margherita Stuffed Pizza Melt



This vegetarian delight is ridiculously easy to make and equally delicious! I love using sandwich thins to create stuffed pizza melts. Each has only 100 calories and 5 grams of fiber!  The skinny for 1 pizza melt, 186 calories, 6 grams of fat and 5 Weight Watchers SmartPoints. This makes a yummy, quick lunch or dinner the whole family will enjoy!

Cook Time: 5 minutes


1 Oroweat Sandwich Thin, see shopping tip

1 teaspoon reduced-fat butter or Smart Balance Light

1½ tablespoons pizza sauce or marinara sauce

2 tablespoons tomato, chopped

1 fresh basil leaf, chopped, optional

1 slice or ¼ cup shredded light Jarlsberg, light provolone or light mozzarella cheese


1. Preheat Panini maker or George Foreman grill. This melt can be cooked in a pan on the stove top, see cooking tip below.

2. Spread outside of the sandwich thin, both top and bottom, with ½ teaspoon of butter on each. Split open and spread inside of the bottom slice with pizza sauce. On top of sauce add chopped tomato and chopped basil, if using it. Top with 1 slice of cheese. Place remaining top piece of sandwich thin, butter side out.

3. Place in Panini maker or George Foreman grill and cook for 4 to 5 minutes until melted and golden brown. Remove with a spatula as the cheese oozes out a bit while cooking. I love it that way!

4. Serve with a fork and knife.

Makes 1 serving (1 skinny stuffed pizza melt)

Food Fact

In 1889, during a visit to Naples,  Queen  Margherita of Italy was served a pizza resembling the colors of the Italian flag, red (the tomato), white (the cheese) and green (the basil). This kind of pizza has been named after the Queen as Pizza Margherita.

Shopping Tip

Oroweat Sandwich Thins can be found in most large supermarkets. One sandwich thin has 100 calories, 1g fat and 5g fiber. They come in several flavors with the same nutrition facts. Use your favorite.

Cooking Tip

This pizza melt can also be made in a nonstick pan. Be sure to coat the pan first with cooking spray. Cook over medium heat for about 2-3 minutes until golden, turn over and continue to cook for another 2-3 minutes until cheese is melted and the sandwich thin is golden brown.
