Ingredients
- 1 cup onions, chopped
- 2 teaspoons garlic, minced
- 1 (12 oz) package fully cooked Trader Joe’s chicken and herb sausages, cut into small pieces (or your favorite), see shopping tips
- 1 (48 oz) container Swanson’s reduced-sodium chicken broth or 1 (32 oz) container and 1 (14.5 oz) can
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (9-10 oz) package refrigerated cheese tortellini, see shopping tips
- 1 (6 oz) bag fresh baby spinach
- Âľ teaspoon dried basil
- Black pepper, to taste
- â…›-ÂĽ teaspoon crushed red pepper flakes, to taste
- Grated Parmesan cheese, optional topping
Instructions
- In a small microwave safe bowl, add onions. Cook in microwave for 2 minutes, to soften.
- Coat a large, nonstick pan or pot with cooking spray. Add sausage pieces, cooked onions and garlic. Cook and stir over medium heat for 2 minutes. Stir in all broth and tomatoes. Bring to a boil.
- Stir in tortellini and return to a boil. Cook for 5 minutes until pasta is almost tender. Stir often. Reduce heat, mix in spinach, basil, black pepper and pepper flakes. Cook for 2 minutes until spinach is wilted and tortellini is tender.
- Ladle into bowls. Top with a little Parmesan cheese, if desired. ThIs soup freezes great, too. Since the pasta absorbs some of the liquid, when reheating, you might need to add a little more chicken broth.

This is one of my all time favorites! I make it all the time, its so easy and everyone loves it. I take it to homebound friends and they all rave about it. My favorite is with the chicken feta/spinach sausage from Aldi’s, I also get the fresh tortellini and a big package of spinach from Aldi’s. This freezes well and is a staple in my home. Can you make this in a crockpot? I don’t have a pot quite big enough.
Sonnie, Although I haven’t tried it, I think you can easily make this soup in the crockpot. I’d probably try cooking it for 3 hours on high heat or 6 hours on low heat. Either, cook the tortellini separately and add it to the cooked soup or cook it with the soup but add it in the last 25 minutes.

Hi Nancy will the pasta not go mushy after freezing it? I don’t usually add the pasta to cook in the soup, it absorbs too much liquid I cook it separately then add before we eat it.

I’m so glad you are enjoying many of my recipes. Thanks so much, Deborah! I’ve been happy with the leftovers that were frozen but the pasta does get a bit soft. It’s still quite good. That said, it’s always best to eat it after being made or within a few days. And yes, you can cook the pasta on the side and add it before serving. With many of my recipes, I usually do this trick.
