Low Calorie Buffalo Turkey Meatballs

All the fabulous flavors of buffalo chicken wings in these bite-size, skinny meatballs. Serve on the side with my skinny ranch dressing, for dipping.  Each yummy meatball has only 37 calories and 1 gram of fat. Happily, these meatballs freeze great. I like to divide them up and pack in pint-size containers and freeze them for several servings in the future.

Shopping Tips
I like Franks Red Hot Original sauce for this recipe. Many hot wings sauces are way too spicy for my taste. This one is just spicy enough. You’ll find it in most supermarkets where Tabasco and other hot sauces are sold. Or, use your favorite sauce.
I used 93% lean ground turkey for this recipe. Since you bake these meatballs, most of the fat oozes out onto the baking sheet. Because of this, the skinny facts were based on subtracting out some of the fat.

Ingredients
  

  • Cooking spray
  • 1 package (1.25 pounds) ground turkey, see shopping tips
  • ¼ cup Panko bread crumbs
  • 1 large egg, I like Eggland’s Best
  • ½ cup onions, finely minced
  • â…“ cup celery, finely minced
  • â…“ cup carrots, finely minced
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • Freshly ground black pepper, to taste
  • â…“ cup Franks Hot sauce, see shopping tips
  • Skinny Ranch Dressing, for dipping (or use your favorite light ranch)

Instructions
 

  • Preheat the oven to 400 degrees. Line a baking sheet with foil and lightly coat with cooking spray. Set aside.
  • In a large bowl, combine the ground turkey, Panko crumbs, egg, onions, celery, carrot and garlic, salt, and pepper. Using clean hands, mix until combined. Roll the mixture (â…› level cup each, into 28 round meatballs.
  • Place meatballs onto the baking sheet and bake until cooked through and golden, about 16 to 18 minutes.
  • Remove meatballs from oven and place in a bowl.  Add buffalo sauce and gently toss to combine. Serve immediately or reheat when ready to serve.  Serve with skinny ranch dressing for dipping, on the side. Or, add the meatballs to a serving plate. Drizzle each with 1 teaspoon ranch dressing and add a toothpick to each, if desired.

  1. I’m sorry Barbara. At this point it’s very easy for me to include Blue and Green. The purple will take a ton of extra work for me. Hopefully i’ll include it in the future.
