High Protein Chef Salad Made Skinny
You can give this timeless classic salad a new look every time you make it by choosing different greens, meats, and dressings. My version is loaded with lean protein and dressed with a yummy skinny ranch dressing. Each huge salad, including dressing, has 265 calories and 9 grams of fat. Makes a very satisfying lunch or main course dinner!

Ingredients

  • 2 tablespoons  The Best Skinny Ranch Dressing or Skinny Thousand Island Dressing  or a lite store-bought ranch dressing
  • 4 cups romaine lettuce, chopped
  • ½ cup (~1½ ounces) ham, chopped or julienne, look for one with no nitrates, see shopping tips
  • ½ cup (~1½ ounces) roasted turkey breast, chopped or julienne 
  • 1 hard-boiled egg, chopped or grated
  • ½ cup grape or cherry tomatoes, halved
  • ¼ cup small avocado, pitted and chopped, optional

Instructions

  • Prepare dressing and refrigerate. 
  • To make 1 main course salad: Place 4 cups of lettuce on a dinner size plate. Top salad with ham, turkey, egg, tomato, and avocado, if desired.
  • Drizzle 2 tablespoons of salad dressing all over the salad. Add more if desired. 
  • This recipe can be doubled, tripled, and so on.

The Chef Salad is thought to be invented by chef Victor Seydoux at the Hotel Buffalo in Buffalo, New York. Trying to save money, he started putting small slices of meat and cheese in salads for some of his customers.

Shopping Tips
I used delicious, lean ham that I bought at Trader Joe’s.  It’s uncured and contains ‘no nitrates.’

  1. Hi there – Found your site when I was searching for a low cal ranch dressing. I was elated. Used the recipe. It sure is delicious. I have breast cancer and so keeping my weight down is crucial. Don’t worry – I had only a small tumor. It hadn’t spread and it was estrogen positive. Beside surgery and a bit of radiation the only treatment I have to endure is taking tamoxifen for 5 years. But everything I see on the internet says don’t gain weight or you will “have a less favorable” outcome. Ergo, I fight weight gain every day since it is so easy to jump 1/2 lb overnight on this medication. Kudos to you for this site and thank you very much. Jodie in Texas

    If this salad makes one main serving , how is it only 2 points on the green plan . Just the hard boiled egg is 2 points on my plan . Am I missing something ?
