It’s light with the subtle flavors of coffee, vanilla, coconut, and oh-so-yummy. It actually can be made with coconut or almond milk. Each large drink has only 30 calories, and 2 grams of fat. Have fun super skinny sipping!

Prep Tips
I made the coffee in my Keurig Machine. I set it for an 8-ounce cup. It makes a much stronger cup. Or brew your coffee extra strong. Regular or decaf coffee works great. I like to make mine with hazelnut or vanilla coffee. Use your favorite.
Regular ice works great, but you can freeze your own coffee cubes for a double dose of caffeine. To make coffee cubes, fill an ice tray with chilled coffee, and leave it in your freezer overnight. Use 1 cup coffee cubes to replace ice cubes.

Ingredients
  

  • â…” cup strong brewed regular coffee or decaf (chilled), I like using vanilla or hazelnut, see prep tips below
  • â…“ cup unsweetened vanilla coconut milk, vanilla almond/coconut milk or unsweetened vanilla/almond milk, I like Blue Diamond, Nutpods or Califia Farms
  • 1 cup ice
  • 1 teaspoon vanilla extract
  • 1-2 packages Truvia, Stevia or Splenda, to taste

Instructions
 

  • In a blender, add chilled coffee and all other ingredients including 1 pkg. of sweetener. Blend on high until all the ice is thoroughly crushed and the drink is smooth. Taste. Add 1 more sweetener, if desired. Blend again. Pour into a glass or travel cup. Add a straw and enjoy!
