Starbucks Turkey Rustico Panini Made Skinny
I love this sandwich at Starbucks and decided to make a skinny, home version. Their sandwich has turkey, smoked Swiss cheese, Dijon mustard, sweet onion marmalade, and baby kale on focaccia. It’s yummy but pretty high in fat and calories with 480 and 18 grams fat.  My skinny remake uses smoked turkey, light Swiss cheese, Dijon mustard, sweet cooked onions, and spinach leaves. In addition, it’s made using one of those high fiber, 100 calorie sandwich thins. Each panini now has 278 calories, 8 grams of fat, and 7 Blue WW Freestyle SmartPoints, and 7 Green.  It even has 7 grams of fiber. So easy to make and so delicious!

Ingredients

Ingredients for Onions:

  • â…“ cup onions, chopped
  • 1 teaspoon vinegar
  • ½ teaspoon brown sugar
  • ¼ teaspoon reduced-fat butter or Smart Balance light

Ingredients For Panini:

  • 1 whole-wheat sandwich thin, see shopping tips
  • 1 teaspoon reduced-fat butter
  • Dijon or yellow or spicy brown mustard
  • 2 ounces smoked turkey, see shopping tips
  • 1 large slice tomato, cut in half
  • Spinach leaves or kale
  • 1 slice (1 oz) light Swiss cheese

Instructions

  • In a small microwave-safe bowl, mix together the onions, vinegar, brown sugar, and butter. Cook in microwave for 1-2 minutes, until onions are soft.
  • To Assemble Panini: Spread the outside of sandwich thin, both top and bottom, with ½ teaspoon of butter on each. Split open and spread the inside of the bottom slice with mustard. On top of mustard, place turkey, cooked onions, tomato, spinach, and top with cheese. Place remaining top piece of sandwich thin, butter side out.
  • To Make in Panini Maker or George Forman Grill: Place in preheated Panini maker or George Foreman grill and cook for 3-4 minutes until cheese is melted and panini is golden brown.
  • To Make on Cooktop: Coat a nonstick pan with cooking spray. Add panini. Cover pan with lid and cook on medium-high heat for about 2-3 minutes, until bottom is golden brown. Using a spatula, turn sandwich over. Flatten a little with the spatula. Cover and cook another 1-2 minutes until golden. Turn over again and cook, uncovered about 30 seconds more, until cheese is melted.

Notes

Makes 1 Panini  (this recipe can be doubled, tripled, and so on.)

Shopping Tips

Sandwich Thins can be found in most large supermarkets. There are several brands available. They come in several flavors with the same nutrition facts. Use your favorite.
Most supermarkets sell smoked turkey and light Swiss cheese. I bought both at Trader Joe’s.  I love their smoked turkey since it contains no nitrates.
