Skinny Greek-Style Chicken Spinach Salad
I love a big salad for dinner! Not only is this salad colorful and packed with flavor, but it’s also loaded with very healthy ingredients. First off spinach is a real superfood! In addition, a variety of chopped veggies and lean chicken are all tossed with a bottled light dressing. I added a few ingredients to the dressing to create a more Greek-style dressing. Each skinny main course salad has 259 calories and 8 grams of fat. This recipe serves 2 but can easily be doubled, tripled, and so on.

Skinny Greek-Style Chicken Spinach Salad
Ingredients
Ingredients for Dressing:
- ¼ cup Newman’s Light Balsamic, Vinaigrette, Ken’s Lite Caesar Dressing or Cardini’s Light Caesar Vinaigrette, see shopping tip
- 1½ tablespoons fresh lemon juice
- ⅛ teaspoon dried oregano
Ingredients for Salad:
- 6 cups fresh spinach leaves
- 1 cup chicken breast, cooked and chopped (remove skin)
- 1 cup cucumbers, chopped
- 1 cup yellow, orange or red bell pepper, chopped
- 1 cup grape or cherry tomatoes, halved
- ⅓ cup red onions, chopped fine
Ingredients for Topping:
- ¼ cup fat-free feta cheese
- 5 Kalamata olives, pitted and sliced, optional
Instructions
- In a small bowl add dressing ingredients and mix together. Refrigerate until ready to toss the salad.
- In a large bowl, add all salad ingredients. Toss with dressing.
- Divide salad among 2 plates. Top each salad with 2 tablespoons cheese and 1½ tablespoons olives, if desired.
