That’s what I did with my shrimp recipe, below. Happily, both surfaces are nonstick so the grill pan is fairly easy to clean too.

Skinny Grilled Shrimp Scampi Skewers
So easy and sooo good…This shrimp recipe cooks very quickly to perfection on The PowerXL Smokeless Grill!
Prep Time: 10 minutes
Cook Time: 15 minutes
3 tablespoons reduced-fat butter
1 tablespoon garlic, minced
2 wood skewers
½ pound frozen extra large jumbo shrimp, (peeled, deveined) defrosted, see shopping tips or use fresh
Kosher salt and freshly ground black pepper, to taste
1 lemon, halved
1. Preheat grill to 400 degrees. I used the griddle pan but you can also use the grill plate.
2. In a small dish, add butter and garlic. Cover, and melt butter in the microwave for about 30 seconds. Be sure to cover the dish with a plate so the butter doesn’t spray everywhere.
3. Thread defrosted shrimp onto 2 skewers; season with salt and pepper, to taste. Brush with 2 tablespoons butter/garlic mixture. Add skewers to the griddle pan and cook, turning occasionally, until the shrimps are pink and opaque for about 3-4 minutes. Serve immediately, drizzled with remaining butter mixture, garnished with lemons and parsley, if desired.
Makes 2 servings
Most supermarkets sell a few brands of frozen shrimp. I used Water Front Bistro raw extra large jumbo shrimp with tails on (peeled & deveined). You can use large instead with or without the tails. Use 4 ounces of shrimp per serving.
