
I love to remake many of the recipes at California Pizza Kitchen. This skinny remake isn’t on their menu anymore but comes from one of their cookbooks. Chicken Caesar salad is very popular. Placing it on top of a pizza makes it a sensational, hearty, salad meal. This version is so much skinnier since I’m using a whole wheat pita for the crust, reduced-fat Caesar dressing, reduced-fat cheese and adding fresh tomatoes to the salad. One serving has 379 calories and 15 grams of fat. One CPK’s salad pizza has a shocking 1248 calories and 69 grams of fat! This skinny one is so yummy, you’ll love it!
Ingredients
Ingredients for Pizza:
- 2 cups cooked chicken breast, boneless, skinless, cut into chunks
- 2 tablespoons Cardini’s Light Caesar Dressing or Girard’s Light Caesar dressing, see shopping tip
- 4 whole wheat pita breads, Middle East or Greek style, see shopping tip
- 1 cup Sargento’s Light Italian Blend Cheese or light mozzarella cheese
Ingredients for Salad:
- 6 cups (10 oz.) bag romaine lettuce
- 1½ cups tomatoes, chopped
- ⅓ cup Cardini’s Light Caesar Dressing or Girard’s Light Caesar dressing
- 2 tablespoons Parmesan cheese, shredded or grated
Instructions
- Preheat oven to 450 degrees.
- Spread each pita with ½ tablespoon Caesar dressing. Keep pita whole.
- Sprinkle ½ cup chopped chicken evenly over the dressing.
- Sprinkle each with ¼ cup mozzarella cheese evenly over the chicken.
- Line a baking pan or cookie sheet with foil. Place the 4 pita pizzas on the pan. Bake for about 8 minutes until pita is golden and cheese is melted.
- In the meantime, in a large bowl, add lettuce and tomato. Toss with ⅓ cup salad dressing. Add more, if desired.
- Place each pizza on a plate. Top each with salad and sprinkle on top of each ½ tablespoon Parmesan cheese.
- Serve at once with a fork and knife.
