CPK’s Provencal Salad Made Skinny

In one of California Pizza Kitchen’s cookbooks, they make a wonderful Provencal salad.  It’s not only colorful, it’s crisp and super flavorful. It works great as a first-course salad or side salad with a meal. Or, you can add some protein such as chicken, steak, or nuts to create a lovely main course salad. I’ve lightened this salad up by using fat-free feta cheese, adding fewer olives, and tossing in a very tasty reduced-fat bottled dressing.  Each serving has 115 calories and 6 grams of fat.  Don’t be surprised if you end up wanting to make this skinny, refreshing salad several times a week. I make it all the time!

Arugula, also known as ‘rocket’, has a peppery, nutty flavor.  In Europe, arugula is nearly as common in a salad as iceberg lettuce is in America.

Healthy Benefits

Arugula leaves fall into the category of cancer-preventing foods.  It’s in the family of cruciferous vegetables like broccoli, cauliflower and cabbage.  Arugula is an excellent source of vitamins A.
Purple cabbage is also a member of the cruciferous family and is rich in antioxidants.  Cabbage is one of the vegetables that are highly promoted by the American Cancer Society.  The purple variety has more nutrients but all cabbage is good for you.

Shopping Tips

Fat-free feta cheese is sold in most supermarkets either in the cheese aisle or deli’s gourmet cheese section. I found it at Trader Joe’s.
Sun-dried tomatoes are sold in the produce section of the supermarket.  They’re available in jars, packed in oil or bags without oil.  I prefer the flavor of the oil packed ones.  Blotting in paper towels removes most of the oil and still retains its wonderful flavor.
To save time, purple cabbage is available shredded in bags in the produce section.  Arugula is also sold in bags like lettuce.
Ken’s Lite Caesar Dressing and Cardini’s Light Caesar Vinaigrette can be found in the salad dressing aisle of most supermarkets.

Ingredients
  

Ingredients for Salad:

  • 1 bag romaine lettuce, about 5 cups
  • 2 cups arugula, see shopping tips
  • 1 cup purple cabbage, shredded
  • 1 cup cherry or grape tomatoes, cut in quarters
  • ¼ cup sun-dried tomatoes, blotted well with paper towels, see shopping tips

Ingredients for Dressing:

  • cup Cardini’s Light Caesar Vinaigrette or Ken’s Steak House Lite Caesar dressing refrigerated, see shopping tips
  • 1 tablespoon Balsamic or white Balsamic vinegar

Ingredients for Topping:

  • ½ cup fat-free feta cheese, see shopping tips
  • 8 Kalamata olives, pitted and sliced

Instructions
 

  • In a large salad bowl, add all salad ingredients.
  • Add dressing and balsamic vinegar and toss well.
  • Divide among 4 salad plates or bowls.
  • Top each salad with 2 tablespoons fat-free feta and 2 sliced olives.
