1 sandwich thin, I used Oroweat 100% whole wheat or use your favorite sandwich thin
½ teaspoon light butter
2 tablespoons avocado, mashed (about ¼ avocado)
Salt and pepper, if desired
1 large slice tomato
1 slice (¾ oz)Lite Jarlsberg (reduced-fat Swiss cheese) or your favorite, see shopping tips
Instructions
Spread the outside of each piece of sandwich thin with ¼ teaspoon butter. Spread the inside bottom of ½ sandwich thin with mashed avocado. Sprinkle top of avocado with a little salt and pepper, if desired. Add tomato slice and cheese. Top remaining sandwich thin.
In a nonstick pan, add sandwich and cook for 2 minutes on medium-high heat. Using a spatula, turn over and continue to cook for about 1-2 minutes until browned on each side.
