Fabulicious, Skinny Chicken Alfredo Gnocchi Bake
A wonderfully easy, comfort food dish. Chicken Alfredo meets little potato dumplings (gnocchi) to create a heartwarming casserole. Each serving has 304 calories and 6 grams of fat.

Ingredients

  • 3 cups gnocchi (16 ounces), see shopping tips
  • 1 (10 oz.) package frozen spinach, thawed
  • 2 cups chicken, cooked and diced
  • 1 (15 ounce) jar light Alfredo sauce, see shopping tips
  • 1 cup fat-free ricotta cheese or cottage cheese
  • ½ cup reduced-fat mozzarella cheese, shredded

Instructions

  • Cook gnocchi according to package directions. Drain. In a large bowl, mix together cooked gnocchi, spinach, chicken, Alfredo sauce and ricotta or cottage cheese. Spoon into a casserole dish and spread out evenly.
  • Top evenly with mozzarella cheese. Bake at 400 degrees for 20-22 minutes. Turn oven to broil for 2-3 minutes or until the cheese starts to brown. Make sure you keep an eye on it because it will brown quickly. Serve immediately.
  • This casserole freezes great!

Makes 6 servings. Each serving 1 slice.

Potato Gnocchi are Italian potato dumplings. Gnocchi are commonly cooked on their own in salted boiling water and then dressed with various sauces depending on the type of gnocchi and recipe used. Gnocchi can be purchased ready-made from grocery stores.

Shopping Tips
You can find packages of potato gnocchi in the refrigerated, pasta section of the supermarket. Sometimes it’s in the shelf stable, dry pasta section.  I used Trader Joe’s Gnocchi Italian. Although their pkg. is a 17.6 ounce package, just use 16 ounces.
I used Classico Light Alfredo Sauce for this recipe. It’s shelf stable and found in the pasta sauce aisle. There are other brands available, if you can’t find this one.

Substitution Tips
You can replace the gnocchi with frozen hash brown potatoes (cubed not shredded). Thaw potatoes first. Coat a nonstick pan with olive oil spray and cook until potatoes are browned. Then add to remaining ingredients.
