Dreamy, Dairy Free, Skinny Mashed Potatoes
Mashed potatoes can still taste great even without dairy in them! I’m using reduced-sodium chicken broth instead. The delicious flavor is also coming from cooked onions and a little Smart Balance Light. Each serving has 125 calories and 2 grams of fat.

  • pounds Baby Dutch Yellow Potatoes, Yukon gold,  red potatoes or baking potatoes, scrubbed and cut into even-sized chunks (use larger potatoes, if you want the skins removed), see shopping tip
  • ¾ cup reduced-sodium chicken broth
  • 2 cups onions, chopped
  • Salt and pepper, to taste
  • 2 tablespoons Smart Balance Light, see healthy benefits

  • If you want to remove the skins, peel the potatoes first, before cutting them into chunks. Add potatoes to a pot and cover with water. Bring to a boil, cover and simmer for about 15-20 minutes until tender.
  • In the meantime, place onions on a microwave-safe plate and cook in the microwave for about 4 minutes, until soft.
  • Add cooked onions and chicken broth to a blender and blend until smooth.
  • Drain potatoes into a colander.  Place drained potatoes back in pot. Add Smart Balance, pureed onions and broth, and a little salt and pepper. Turn flame to medium and smash using a potato masher or the back of a fork.  Mash potatoes until smooth and all the ingredients are heated.

Healthy Benefits

Potatoes are high in vitamin C and have more potassium than a banana. They also contain fiber and iron.
Onions are a powerful antiseptic and are rich in vitamins A, B, and C. They also contain folic acid, calcium, iron, and fiber.
Smart Balance Light is a buttery-tasting spread made with a unique blend of natural oils that improves the ratio of “good” HDL to “bad” LDL2. It’s a good source of Omega-3, has 50% less fat and calories than butter or sticks margarine, no trans fats or partially hydrogenated oils. It’s also Lactose-free. gluten-free and non-dairy.

Shopping Tips

You’ll find Baby Dutch Yellow Potatoes in bags in the produce section of many supermarkets. I bought them at Trader Joe’s. You can also use Yukon Gold or red (new potatoes) or good old baking potatoes.
