Panera Broccoli Cheddar Soup Made Skinny (Copycat)


Ingredients for Soup:

  • 1 cup onions, chopped
  • 3 tablespoons reduced-fat butter or Smart Balance Light
  • 2 cups reduced-fat milk (2%), I used lactose-free milk
  • 1 ½ cups reduced-sodium chicken broth or vegetable broth for vegetarian
  • 1 (10 oz) can Campbell’s Healthy Request Cheddar Cheese Soup (condensed), see shopping tips below
  • 2 cups broccoli florets, chopped, see food facts below
  • 1 cup carrots, shredded or finely chopped, I used a bag of shredded carrots
  • 1 cup celery, thinly sliced
  • ½ teaspoon garlic powder
  • Black pepper, to taste

Ingredients for Topping:

  • 1 cup light cheddar cheese, shredded


  • Place onions in a microwave-safe, small bowl and cook in the microwave for 2 minutes to soften. Set aside.
  • In a medium pot, melt butter. Stir in milk, chicken or vegetable broth, and condensed cheddar cheese soup, Mix well. Bring up to a simmer and continue to simmer, uncovered for 10 minutes. Stir often. 
  • Mix in softened onions, broccoli florets, carrots, celery, garlic powder and a little black pepper, to taste.  Continue to simmer until all vegetables are tender, about 15-20 minutes. Stir often.
  • To serve: Add 1¼ cups soup to each bowl. Top each with ¼ cup shredded cheese. Mix into soup.
